This week, our FFV is asparagus! Asparagus is native to most of Europe, northern Africa, and western Asia. It has been used as both food and medicine in the past. There are even pictures of asparagus being offered as gifts in an Egyptian frieze that dates back to 3000B.C.! Asparagus must be eaten as young shoots; as they age, they become woody. They are low in sodium and calories, and they are a good source of many vitamins and minerals.
