This Week's FFV

Our FFV snacks this week are red potatoes! Potatoes are the world's fourth largest food crop, making up much of the world's food supply. China leads the world in potato crops, producing approximately 88 million metric tons of potatoes! India is next with half of that; combined, China and India produce nearly a third of the world's potatoes. Red potatoes tend to be more waxy and hold their shape better than other varieties of potatoes and thus are better for boiling and roasting, than they are for baking and frying.
