Our FFV snack this week is artichoke! Artichokes are actually flower buds, before they fully bloom. Once they bloom into a flower, the artichoke is inedible. Most of the world's artichokes are cultivated in Europe (they are popular in Mediterranean cuisine); in the U.S., we get nearly all of our artichokes from California. Artichokes can also be made into teas and liqueurs, and extracts from the leaves have been thought to help lower cholesterol.
