We have cauliflower (drizzled with French dressing!) this week for our FFV snack.

Cauliflower is high in vitamin C; it has 77% of your daily recommended intake of vitamin C. Cauliflower is also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, and phosphorus, and a very good source of fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese. It is a good substitute for potatoes or rice for low-carb dieters. Cauliflower can be roasted, boiled, fried, steamed, pickled, or eaten raw.
