This week our students enjoyed a favorite, watermelon, as their FFVP snack.


Did you know you can eat the rind of the watermelon? Although it is rarely eaten, the rind is edible, chock-full of nutrients and provides fiber. They are often used in curries and salads for diabetics because of its low sugar content. The flesh contains many antioxidants and vitamins as well, all of which help us with keeping our kidneys clean, lowering our blood pressure, and preventing certain diseases.
