Today we had zucchini for our FFVP snack.


Zucchini is a summer squash that can actually grow quite large! The ones that we eat are harvested when they are still young, while the seeds inside are soft and immature. Zucchini is often eaten cooked (unlike its relative, the cucumber) and can even be baked into bread, similar to banana bread, or made into noodles to serve as pasta for low carb eaters. You can even eat the leaves and flowers (often served deep fried, like tempura) of the plant! Zucchini contain folate, potassium, and vitamin A, and is low in food energy.
